Fried Avocado Sticks

Stick Ingredients: 

2 avocados 
3 whole eggs 
¼ cup whole milk 
1 ½ cup italian bread crumb 
1 ½ cup panko bread crumb 
1 cup all purpose flour 
¼ teaspoon cumin 
¼ teaspoon smoked paprika 
½ teaspoon salt 
¼ teaspoon pepper 

Dipping Sauce Ingredients: 

1 cup kewpie mayo 
2 tablespoon sambal 
½ teaspoon lime juice 
1 tablespoon chopped cilantro 
oil or fat for deep frying 
1 large pot 4-5 inches deep 
salt & pepper (for seasoning) 

combine mayo, sambal, lime juice, and cilantro mix well set aside to use for dipping 

Directions:

Crack and beat 3 eggs, adding milk as you beat, set aside. Combine italian and panko bread crumbs, set aside. Combine flour, cumin, smoked paprika, salt and pepper, set aside. Place large pot on stove fill about half way with oil and heat until 350 F.

Meanwhile, slice avocados into wedges. Gather seasoned flour, egg wash, breadcrumbs and begin using the 1-2-3 breading method: 1. flour 2. egg wash 3. bread crumb (pro tip: use one hand for dry ingredients and one hand for wet ingredients to avoid a sticky gooey mess).

When oil reaches temperature add in small batches the breaded avocado and let fry until golden brown. Once golden remove from oil with slotted spoon and place on paper towels, season lightly with a salt and pepper let sit 3 minutes. Dip into sauce and enjoy!
