SMOKED SALMON EGG WHITE FRITTATA WITH BABY BOK CHOY AND EVERYTHING BAGEL SPICE 

8oz. egg whites (approx. 8 eggs)

2oz. smoked salmon

1ea. baby bok choy

.5oz pickled red onion

1 tsp. everything bagel spice

Directions:

1. Steam bok choy and chill in ice bath

2. Rough chop smoked salmon

3. Spray an 8 inch pan with non-stick spray

4. Pour the egg whites into the pan

5. Drop remaining ingredients into pan over the whites (sprinkle the everything spice on last) 

6. Bake in oven at 350 degrees fahrenheit for twenty minutes or until eggs are no longer runny

Pickled Red Onions

1 red onion

.5 cup red wine vinegar

.5 cup sugar

.5 cup water

1 pinch black pepper

Directions:

1. Peel and thinly slice onion (discard peel)

2. Simmer onion and remaining ingredients for 15 minutes, chill in liquid

Note: It's best to make the onions the day before if possible. They will keep for up to 2 weeks in your fridge.
