  • 1 smoked pork belly portion (diced)
  • 1 medium white onion (diced)
  • 3 garlic cloves (smashed)
  • 1 pineapple (lightly charred and diced)
  • 1 can of guava paste (cubed)
  • 2 bay leaves
  • 1 quart of apple cider vinegar
  • 1/4 cup molasses
  • 1/4 cup Worcestershire Sauce

Cooking Instructions

  • Render pork belly
  • Add your white onions and sweat until it begins to caramelize
  • Add the garlic and cook for approximately 3 minutes on medium low heat
  • Add your pineapple and cook for another 5 minutes
  • Add your guava and cook until fully dissolved
  • Add the bay leaves, molasses, Worcestershire, apple cider vinegar and cook it down to a jam-like consistency
  • Salt to taste
  • Run the mixture through a blender until smooth
