Owner and founder Paul Allam is a chef-turned-baker with a love of traditional comfort food and an appreciation of all things handmade. An Australian transplant to NYC, Allam founded the wildly successful Bourke Street Bakery in 2004 on a quiet corner storefront in Sydney. After traveling to New York and falling in love with the energy of the city, Allam was inspired to relocate here along with his wife and three children. He is proud to offer new dishes with an American twist, and to introduce New Yorkers to elevated Aussie classics.
