Meet Chef Jorge Espinoza

Born and raised in Querétaro, Mexico, Jorge Espinoza followed his love of Italian cuisine to New York, where he began working as a butcher at Monkey Bar. From there, he moved to cooking at Tapika under chef David Walzog, whom he considers his mentor. Espinoza honed his skills and passion for the cuisine at L’imperó, as well as Alto and Totto Il Giorno in the Hamptons, and finally opened Scarpetta with Antonello Paganuzzi in the Meatpacking District in 2008. Now located inside the James NoMad — as well as additional wildly successful locations in Miami, Las Vegas, Beverly Hills, and Toronto — Espinoza’s craft represents a marriage of tradition and creativity, underscored by consistency, dedication, and passion.
